Strawberries & Coconut Cream Pop!

Ingredients

1 lb Strawberries Halved

1/2 Cup Maple Syrup

1 Can Coconut Milk

1 TSP Vanilla

Pinch of Salt

•Pre-heat oven to 375 degreed fahrenheit 

•Roast halved strawberries for 20 min

•Blend roasted strawberries & 1/4 cup maple syrup in a blender

• In a separate bowl whisk coconut milk, vanilla, salt & remaining 1/4 cup maple syrup

•Scoop strawberry mixture into pop molds & then add the cream

•Freeze for 4 hours & taste the magic! 

This maybe my favorite pop of all time! It tastes so rich & decadant! 

 

Steel Cut Oatmeal with Berries

Ingredients:

1/3 cup Steel Cut Oatmeal

Berries of your choice (pictured raspberries & blackberries)

Pepitas (raw or dry roasted)

Dash of Cinnamon

1 Tbsp Honey

•Cook Steal Cut Oatmeal according to Package (usually equal parts oatmeal to water)

• Wash & Dry Berries

• Drizzle Honey

• Sprinkle Pepitas & Cinnamon

Ramp Roast!

Ingredients:

One bunch of Ramps

Olive Oil

Salt & Pepper

• Pre Heat oven to 350 degrees

• Rinse & Pat dry Ramps

• Drizzle Olive Oil, Salt & Pepper onto Ramps

• Roast for 10-15 min until bulbs are tender & leaves are crispy

 

Quinoa Fried 'Rice'

Ingredients:

1 cup Quinoa

2 Eggs

1 Tbsp Toasted Sesame Oil

1/2 Yellow Onion Diced

2 Carrots Sliced

3 Scallions Sliced

2 Cloves Garlic Minced

1" Piece of Ginger cut into matchsticks

Splash of Soy Sauce

Avocado

Chives & Chive Blossoms

Sunflower Seeds

Sriracha (Optional)

• Make quinoa according to package

• Sauté onion until translucent in sesame oil

• Add garlic, ginger, carrot, scallions until softened

• In a separate skillet scramble your eggs

• Add eggs & quinoa to veggie skillet, continue to cook adding soy sauce/sriracha

• Plate your quinoa fried rice adding slice avocado, sunflower seeds & chives
